Carol's Shrimp and Calamari Salad Submitted by Bill Jermyn
2 pounds of cleaned shrimp (frozen) 1 pound of cleaned Calamari 2 stalks of Celery cut up small 1 large can of pitted black olives 4 Garlic Cloves-Minced 2 Tblsp of fresh chopped Parsley Salt and Pepper to taste Lemon Juice (between 1/4 and 1/2 cup) Olive Oil 3 Tbsp
Boild cleaned shrimp three to four minutes and drain. Cut off the ends of the Calamari and rinse a few times in clean water-then cut the Calamari into rings.
Boil Calamari three to four minutes (no more than that because it gets tough).
Drain well. Mix all of the remaining ingredients and chill for a few hours.
What is great about this is it can be made a day ahead of time. You could also do it with frozen cooked shrimp and avoid the boiling of shrimp.
